Cut the pork loin into 1-inch cubes.

Heat 2 Tbsp of vegetable oil in a large skillet or pot over medium-high heat. Add the pork cubes to the skillet, searing them on all sides until they are golden brown.

In a separate bowl, combine 1/2 cup of soy sauce, 1/2 cup of water, 1 Tbsp of minced garlic, 1 Tbsp of minced ginger, 1 Tbsp of sesame oil, 2 Tbsp of sugar, and 1 tsp of chili flakes. Stir until the sugar is completely dissolved.

Reduce the heat to medium. Pour the prepared sauce over the seared pork in the skillet, stirring to coat the pork evenly. Reduce the heat to low, let it simmer for 20 minutes or until the pork is tender and the sauce has thickened.
