Cultural Context

Snapping Turtle Soup has its roots in the culinary traditions of the Southern United States, where it was once a staple among local communities. The dish is often associated with hunting and foraging, reflecting a deep connection to the land and its resources. Today, while less common, it remains a delicacy in some regions, celebrated for its rich, gamey flavor and hearty texture.

1

Trim any leftover connective tissue off the turtle meat.

2

Soak the turtle meat in a saltwater solution for about 4 days to pull out blood.

3

Drain the saltwater solution.

4

Add High Mountain steak seasoning to the turtle meat and rub it in.

5

Add 24 oz of water to the bottom of the can cooker.

6

Place the turtle meat into the can cooker.

7

Snap the lid onto the can cooker and set the stove to a very low flame.

8

Once the can cooker starts to steam, let it steam for about 3 to 4 hours until the meat starts to fall off the bone.

9

After steaming, refrigerate the meat overnight to let it set up.

10

Carefully pull the meat off the bones, being cautious of small vertebrae.

11

Place the cleaned meat back into the can cooker.

12

Add two bags of mixed vegetables, one can of diced tomatoes, a couple of bay leaves, whole peppercorns, parsley, and basil to the can cooker.

13

Set the can cooker back on the oven without sealing the lid, and simmer on low heat for about 2 hours until the flavors blend and vegetables are cooked.
