1

Place 2 cups water in a 4-quart saucepan.

2

Add 1 pound and 1/3 turtle meat to the water and bring to a boil.

3

Skim off the foam that collects on top as the turtle meat heats.

4

Once boiling, add 1 quartered onion, 1 bay leaf, 1 teaspoon salt, and 1 teaspoon cayenne pepper. Mix well.

5

Cover and simmer for 2 hours until the turtle meat is tender and falling apart.

6

Remove the turtle meat and cut it into cubes on a cutting board.

7

Strain the broth and reserve it, discarding the solids.

8

Clean the saucepan and heat it again, adding 2 tablespoons of butter.

9

Add the chopped onion to the pan and soften it.

10

Stir in 1/4 cup flour and mix until bubbly and lightly golden brown.

11

Whisk in the reserved broth and cook until thickened.

12

Add 1/2 cup tomato puree and 1 tablespoon Worcestershire sauce, simmering for about 10 minutes.

13

Add 1/4 cup chopped parsley and stir to mix.

14

Add the chopped hard-boiled eggs and the cubed turtle meat to the mixture to rewarm everything.
