Preheat the oven to 375°F (190°C).
Sauté onions and garlic in vegetable oil until translucent.
Add chopped tomatoes, peppers, and spices; cook until soft, about 5 minutes.
Stir in grated cheese and chopped herbs; remove from heat.
Roll out the risen dough into a flat circle.
Spread the filling evenly over half of the dough circle.
Fold the dough over to create a half-moon shape and seal the edges.
Place on a baking sheet and brush with oil.
Bake for 25-30 minutes until golden brown.
Let cool slightly before slicing and serving.
