Strip the leaves off the stalks of the common mint, discarding any larger or wilting leaves.

Chop the mint leaves finely. If knife skills are lacking, use kitchen scissors to chop the mint in a mug.

Add 1.5 tablespoons of white sugar to the chopped mint to help with chopping.

Continue chopping the mint and sugar together until finely chopped.

Transfer the chopped mint and sugar to a bowl.

Add 3 tablespoons of just off the boil water to the bowl and pound the mixture with the end of a wooden spoon to extract flavor from the mint.

Add 2 tablespoons of white wine vinegar to the mixture for tang.

Stir the mixture well and let it stand for about an hour before using.
