Apple cider vinegar adds a fruity note while being more widely available.

Honey provides natural sweetness with a unique flavor.
Chop fresh mint leaves individually and collect 200 grams in a bowl.
Add 12 teaspoons of sugar to the bowl with chopped mint.
Pour in 20 teaspoons of white wine vinegar (or alternative vinegars like malt or apple cider vinegar).
Add 2 teaspoons of pink Himalayan salt.
Pour in 16 teaspoons of hot water and mix everything together.
Taste the mixture and adjust with more hot water if needed, adding 3 more tablespoons of hot water and white wine vinegar if desired.
Let the mixture steep for about 10 minutes to allow the flavors to meld.
Prepare recycled mint sauce jars by heating them in the oven to self-seal.
After steeping, jar the mint sauce and pressure can them for 10 minutes.
