Take fresh mint from the garden and wash it under cold water.
Shake off excess water from the mint.
Pick off the leaves from the stems and place them in a bowl.
Chop the mint leaves finely using a sharp knife or a blade.
Add a dessert spoon of caster sugar to the chopped mint.
Add a pinch of salt to the bowl.
Add four dessert spoons of white wine vinegar to the mixture.
Add four dessert spoons of boiling water to the mixture.
Stir the mixture well and taste it, adjusting with more vinegar if desired.
Let the mint sauce sit for at least 30 minutes to allow flavors to meld.
Transfer the mint sauce to a smaller bowl for serving.
