Cut a lemon in half and juice it into a large bowl, using juice from only half a lemon.
Peel and core 3 apples, then slice them into 1/8 to 1/4 inch slices.
Toss the apple slices in the lemon juice to coat them and prevent browning.
In a separate bowl, mix 1/2 cup granulated sugar with 1 teaspoon ground cinnamon, then pour this mixture over the apples and toss to coat.
Weigh out 212 grams of all-purpose flour (about 1.5 cups) and add 1/4 teaspoon salt, 2 teaspoons baking powder, and 1/4 teaspoon ground nutmeg; whisk together and set aside.
In a mixing bowl, beat 1/2 cup (113 grams) softened butter for 1 minute using a stand mixer.
Add 1 cup (200 grams) granulated sugar to the butter and beat for 2 minutes until light and fluffy, scraping down the sides of the bowl as needed.
Add 2 large beaten eggs to the mixture, mixing well and scraping down the bowl as necessary.
Add 1/3 cup neutral flavored oil and 1.5 teaspoons pure vanilla extract, mixing until combined.
Gradually add the flour mixture to the wet ingredients at low speed, mixing just until combined and scraping the bowl as needed.
Prepare an 8x8 inch baking dish by greasing it lightly and lining it with parchment paper.
Scrape the batter into the prepared baking dish and smooth the top.
Arrange the apple slices on top of the batter in three overlapping rows.
Place the baking dish on a baking sheet and bake in a preheated oven at 375°F (190°C) for about 50 minutes, or until the apples soften and the cake puffs up.
Let the cake cool in the pan for 15 minutes before unmolding it using the parchment paper.
Cut the cake into nine pieces and serve.
