1 tsp ground cinnamon
1 tsp nutmeg (freshly grated)
2 tbsp melted butter

Preheat your oven to 180°C (350°F). Line the bottom and sides of a 9-inch (23cm) springform pan with parchment paper.

Peel, core, and chop 4 apples into small cubes. Add the zest and juice of a lemon. Set aside. Halve the remaining apple, core it, and slice it into thin crescents for the top.

In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and freshly grated nutmeg.

In a large mixing bowl, whisk the eggs and sugar until pale and slightly fluffy (about 2 minutes). Add the milk, vegetable oil, and vanilla extract. Stir until well combined.
