2-3 Beef Bones
Water (fill to halfway in IP)
1 Onion (half for broth, half for garnish)
1 Thumb of Ginger (sliced)
6 Star Anise
2 Cinnamon Sticks
4 Cardamom Pods
½ Tsp Cilantro Seeds
5 Cloves
3 Tbsp Fish Sauce
Rice Noodles (one nest per serving)
2 Scallions
Handful Cilantro
Handful Beansprouts
Handful Thai Basil
1 Chili
1 Lime

Fill cold water to halfway in IP. Set to sauté and add beef bones and brisket. Boil for 15-20mins, drain and wash bones.

Fill fresh water to halfway in IP. Re-add bones and brisket.

Add onion, ginger, star anise, cinnamon sticks, cardamom pods, cilantro seeds, cloves and fish sauce.

Place lid on and cook at high pressure for 90 minutes, natural release.

Remove lid and using a slotted spoon, remove onion, ginger and spices from broth.

Remove the brisket and place in ice bath for 5 minutes; this will make it easier to slice later.

Using a spoon, remove any excess oil formed on top of the broth.

Boil rice noodles on the side. Drain and add to serving bowl.

Add sliced brisket, sliced onion, scallions, cilantro, beansprouts and broth to the bowl.

Garnish with Thai basil, wedge of lime, chili and a dash of sriracha (optional if you enjoy it spicy!).

Enjoy immediately and wash down with a cold beer!
