Boil chat potatoes in salted water until al dente, then chop into quarters or halves.

Chop smoked chicken breasts finely and add to the bowl.

Chop spring onions and add about a cup to the bowl.

Add a cup of sundried Roma tomatoes to the bowl.

Add a cup of pitted kalamata olives to the bowl.

Add a cup of cheddar cheese to the bowl.

Chop flat leaf parsley and add to the bowl.

Add boiled eggs to the bowl and season with salt and pepper.

Add a cup of whipping cream to the mixture and toss gently to combine.
