Stir fry string beans over medium heat.
Add extra virgin olive oil to the pan.
Trim the tops and bottoms off the string beans before adding them to the pan.
Stir the string beans quickly to coat them in oil.
Cook the string beans for 4 to 5 minutes until they are semi-tender but still crisp.
Add a small amount of water or vegetable stock to the pan.
Let the string beans cook for a few minutes until the water evaporates, about 7 minutes.
Check that the water has reduced and the string beans are semi-crispy and tender.
Add ginger, garlic, spicy hot chili, and wine (optional) to the pan.
Add soy sauce and toss the string beans quickly to combine.
Add a pinch of black pepper and optionally add coriander or turmeric for flavor.
Drizzle a little sesame oil over the string beans and stir again.
If you prefer the string beans a bit burnt, let them cook a bit longer.
Add toasted pecans to the dish before serving.
