Season with salt and black pepper to taste, cooking for an additional 2 minutes.
In a separate pan, heat a little oil over medium heat and crack in eggs.
Fry eggs until the whites are set and yolks are cooked to your liking, about 3-4 minutes.
Serve the chow mein topped with fried eggs and garnish with chopped green onions.
Add bean sprouts on top for extra crunch.
