Chop the pork for even cooking.

Spread lime juice and lemon juice over the pork for citrus flavor.

Add the diced peppers to the pork and mix them in.

Place Mexican cheese on the griddle.

Put a tortilla on top of the cheese.

Chop fresh cilantro.

Assemble the taco with the pork, charred limes, queso fresco, fresh salsa, and cilantro.
