Add 900 grams of flour to a mixing bowl.
Add 700 grams of wholemeal flour and 200 grams of white flour to the bowl.
Add 18 grams of salt and 18 grams of wholemeal improver to the dry ingredients.
Dissolve 28 grams of yeast in 700 grams of water at room temperature.
Combine the dry ingredients with the dissolved yeast and water in the mixing bowl.
Mix on first speed for 1 minute, then switch to second speed for 10 minutes, checking halfway through.
If the dough is too slack, add a little more flour and continue mixing for another 5 minutes.
Spray the mixing bowl with oil to prevent sticking, then cut the dough into two pieces, each weighing around 800 grams.
Mold the dough pieces and cover them for about 10 minutes to rest.
Grease two bread tins with prep spray.
Shape the dough pieces into loaves and place them seam side down in the tins.
Let the loaves prove for about 45 minutes, checking after 30 minutes.
Preheat the oven to 210-220°C (410-428°F).
Check the loaves after 45 minutes of proving; if they look ready, score the tops with a razor blade.
Bake the loaves in the preheated oven for 20-30 minutes, depending on your oven.
Remove the bread from the oven once baked.
