Attach the dough hook to the KitchenAid mixer.
Pour 2 cups of lukewarm milk into the mixer.
Add 1/4 cup of avocado oil to the milk.
Add 1/4 cup of granulated sugar (or any sweetener like honey or molasses).
Add 1 tablespoon of salt to the mixture.
Add 4 cups of whole wheat flour to the mixer.
Stir the mixture on low speed to combine.
Add 1 tablespoon of instant yeast to the mixture.
Gradually add up to 2 additional cups of flour as needed, depending on the dough's stickiness and humidity.
Knead the dough on speed 2 for about 2 to 4 minutes, adjusting with more flour if necessary.
Check if the dough is ready by seeing if it climbs the hook and pulls away from the sides of the bowl.
If the dough is still too sticky, add about 1/4 cup extra flour as needed.
Let the dough rest covered for 15 minutes (optional, for better texture).
Continue kneading until the dough is soft but not too stiff, adjusting flour as needed.
If kneading by hand, mix the ingredients in a bowl and transfer to a floured surface.
Demonstrate hand kneading technique: push with palms, pull back with fingertips, and turn the dough.
