1

Start by preparing the beef, cutting it into thick pieces.

2

Cut the pork into pieces as well, using 2.5 lbs.

3

Cut the chicken into pieces, using 2 lbs.

4

In a pot, add a bit of oil and sear the beef with bay leaves, thyme, salt, and pepper.

5

Once seared, transfer the beef to a bowl.

6

In the same pot, add more oil and sear the pork with bay leaves, thyme, salt, and pepper, then transfer to the bowl.

7

Repeat the searing process for the chicken, adding bay leaves, thyme, salt, and pepper, then transfer to the bowl.

8

Prepare the banana leaves by washing them and adding hot water to soften them for wrapping.

9

Roast 1 liter and 9 ounces of tomatoes, bell pepper, onion, tomatillo, jalapeño, and garlic until slightly charred.

10

Remove the skin from the roasted ingredients and place them in a blender with 1 cup of water to blend into a sauce.

11

In a cooking pot, add the seared beef and pork first, then pour the blended sauce over them.

12

Add the chicken last, along with the juices from the seared meats, and season with salt.

13

Blend the remaining ingredients in batches if necessary to fit in the pot.

14

Wrap the mixture in banana leaves, tying them securely with kitchen twine.

15

Cover the pot with more banana leaves to prevent the filling from escaping during cooking.

16

Add 4 cups of hot water to the pot and cover it, cooking for 40 minutes.

17

Prepare the rice by heating 2-3 tablespoons of oil in a pan, adding chopped onion and tomato, and frying them.

18

Add 2 cups of jasmine rice to the pan and fry until slightly toasted.

19

Pour in 2.5 cups of hot water, lower the heat, and let it cook for 16 minutes.

20

After 1.5 hours of cooking the subanik, remove the top layer of banana leaves and cut the twine to check the doneness of the meats.

21

Serve the subanik with rice and enjoy.
