1 cup of canola oil
All purpose flour (enough to add a light coating on each fish)
2 tsp maggi fish seasoning
1 tsp goya adobo
1 tsp garlic powder
1 tsp black pepper
1 tsp seafood seasoning
1 handful of pimento seeds
5 sprigs of thyme
1/2 onion cut into rings
1/2 green pepper sliced into strips
1/2 red pepper sliced into strips
1/2 cup of oil
1 tbsp Ketchup
2 tsp vinegar

Wash your fish with fresh lime or lemon juice. You can soak it in water and lime while you prep your onions & peppers.

Make 2 diagonal slits about 1/2 inch deep on both sides of the fish.

Pat each fish dry with a paper towel.

Add the seasonings listed above and massage them into the fish.

Add 1 cup of oil to your pan and start heating it on medium.

Lightly sprinkle and pat the flour onto each fish until it has a light coating of flour completely covering it.

Ensure the oil is hot before frying the fish.

Fry each fish for 4-5 minutes on each side until golden brown and set aside.

Throw off half the oil and discard.

In the remaining oil on medium heat, add your onions and peppers and sauté for 1 minute.

Add the seasonings listed above and continue to sauté for another 2 minutes.

Add your ketchup and sauté for 1 minute.

Add your vinegar and sauté for another minute.

Pour the sauce on top of the fish and enjoy!
