Pat dry the fish with paper towels.
Combine cayenne pepper, black pepper, garlic, herbs fish seasoning, dry thyme, and chopped onions in a bowl.
Add herb and garlic marinade and grapeseed oil to the seasoning mixture and mix well.
Season the fish thoroughly with the seasoning mixture and let marinate for 30 to 40 minutes.
Heat a skillet and add grapeseed oil, garlic, and ginger.
Add the marinated fish to the skillet and fry until golden brown on each side.
Prepare the escovich sauce by melting butter in a pot, then add pimento, vinegar, carrots, onions, assorted bell peppers, brown sugar, and thyme, stirring to combine.
Once the sauce is ready, set it aside.
Slice the roasted breadfruit in half, remove the middle part, and cut into slices.
Heat oil in a pot and fry the sliced breadfruit until golden brown.
Plate the escovich fish and fried breadfruit for presentation.
