Cut off the tail of the fish using scissors.
Remove the fins by cutting them off with scissors.
Scale the fish carefully to avoid the scales flying up.
Fillet the fish by making a cut along the stomach and removing the black lining inside.
Turn the fish over and fillet the other side, ensuring to remove any bones.
Soak the fish in hot water to help with cleaning if it is frozen.
Add vinegar to the water and clean the fish with half a lemon, rubbing it inside and out.
Rinse the fish in warm water to ensure it is clean.
Prepare seasoning by crushing bay leaves and adding fish seasoning, black pepper, chili pepper, Nando's sauce, ground ginger, garlic powder, thyme, and oregano.
Mix the seasoning and apply it to the fish, ensuring to coat it well.
Cover the seasoned fish with plastic wrap and refrigerate overnight.
Pour vegetable oil into a frying pan and add garlic to check if the oil is hot enough.
Coat the fish in flour mixed with hot spicy chicken fry seasoning before frying.
Fry the fish until golden brown on one side, then flip to fry the other side until brown.
Remove the fish from the oil and drain on paper towels.
Slice red, yellow, and green bell peppers and onion, and fry them in a pot with oil.
Add vinegar to the fried vegetables to create a sauce.
Layer the fried fish in a tray and pour the fried vegetable mixture over the top, ensuring to cover the fish well.
Spray some vinegar over the fish to soak in without drowning it.
