Instructions

  1. 1Soak wood ear mushrooms in warm water until softened, about 15 minutes.
  2. 2Drain mushrooms and slice thinly.
  3. 3Julienne cucumber, carrot, and red bell pepper.
  4. 4Chop green onions and cilantro finely.
  5. 5In a large bowl, combine mushrooms, cucumber, carrot, bell pepper, green onions, and cilantro.
  6. 6In a separate bowl, whisk together sesame oil, rice vinegar, soy sauce, minced garlic, grated ginger, chili oil, salt, sugar, and pepper.

Ingredients

  • 1 lb chicken feet
  • 4 cups water
  • 2 tbsp soy sauce
  • 1 tbsp rice wine
  • 1 tbsp sugar
  • 2 cloves garlic, minced

  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes (optional)

Instructions

  1. 1Clean the chicken feet thoroughly, removing any nails and excess skin.
  2. 2In a large pot, bring 4 cups of water to a boil.
  3. 3Add the cleaned chicken feet to the boiling water and blanch for 5 minutes. Drain and set aside.
  4. 4In the same pot, combine the soy sauce, rice wine, sugar, garlic, ginger, and black pepper.
  5. 5Return the chicken feet to the pot and add enough water to cover them.
  6. 6Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. 7Let the chicken feet braise for about 1.5 to 2 hours, or until they are tender.
  8. 8Stir occasionally and add more water if necessary to keep the feet submerged.
  9. 9Once tender, stir in the sesame oil, green onions, and chili flakes if using.
