Greek yogurt reduces calories while maintaining creaminess
Preheat the oven to 375°F.
Dice 10 cups of stale French bread into bite-sized cubes and place in a large mixing bowl.
Melt 4 tablespoons of unsalted butter in a microwave-safe bowl in 20-30 second intervals until melted.
Add 1/2 cup brown sugar, 1/4 cup granulated sugar, 3/4 teaspoon salt, 1 teaspoon ground cinnamon, and 2 teaspoons vanilla extract to the melted butter and whisk to combine.
Add 1 1/2 cups whole milk and 1 cup heavy cream to the mixture and whisk.
Add 5 eggs to the mixture and whisk until combined.
Pour the mixture over the diced bread and gently toss to coat all pieces.
Transfer the coated bread to a 9x13 baking pan and spread it into an even layer.
Dice the remaining 2 tablespoons of butter and place on top of the bread in the baking pan.
Bake for about 50 minutes until the top is golden brown and the pudding is set but still slightly jiggly.
