Today, panna cotta has gained popularity worldwide, with numerous variations showcasing seasonal fruits and flavors.

Bloom the gelatin by adding 1 tablespoon of gelatin to 3 tablespoons of room temperature water and let it sit for about 10 minutes.
In a saucepan, combine 1 and 1/4 cups of heavy cream and 3/4 cup of milk over medium heat.
Add 1/4 cup of sugar to the cream and milk mixture and stir gently until the sugar melts and does not stick to the bottom of the pot.
Split the vanilla bean, scrape the seeds, and add both the seeds and the pod to the mixture.
Once the mixture starts to bubble, remove it from heat and stir in the bloomed gelatin until it melts completely.
Strain the mixture through a sieve to catch any lumps and the vanilla pod into a measuring cup for easier pouring.
Pour the mixture into molds, using a stainless steel mold and some fancy glasses, and cover with plastic wrap.
Refrigerate for at least 4 hours or overnight for best results.
Prepare the strawberry sauce by cutting 1 lb of strawberries into smaller pieces and placing them in a pot.
Add 1/2 cup of sugar, 1 teaspoon of lemon juice, and 1 tablespoon of water to the pot with strawberries.
Cook on medium heat until the sugar melts and the strawberries turn soft, about 5 minutes, stirring gently.
Transfer the cooked strawberries to a mini blender and puree them.
Strain the puree through a sieve to remove seeds and achieve a smooth texture.
Allow the strawberry sauce to cool to room temperature before refrigerating it.
Once the panna cotta has set, immerse the mold in hot water for 5 seconds to help release it.
Run an offset spatula or knife around the edge of the mold to loosen the panna cotta.
Invert the mold onto a plate and give it a few shakes to release the panna cotta.
Top the panna cotta with the strawberry sauce and garnish with fresh strawberries and blueberries.
