Cut off the stem end of the Roma tomatoes and squeeze out excess seeds and juice.

For the second batch of tomatoes, add 1 tablespoon of sugar, 1/4 teaspoon of black pepper, more onion powder, chopped basil, 2 teaspoons of balsamic vinegar, and 1/8 teaspoon of baking soda.
