1/2 cup dried fruit
2 tablespoons molasses

Cover the jar with a paper towel or coffee filter and secure it with a rubber band.

Let the mixture ferment at room temperature for 24 to 48 hours, checking for bubbles as a sign of fermentation.

Taste the mixture after 48 hours to check for sourness and carbonation.

Strain the liquid into a bottle using a strainer, leaving some headspace.

For a second ferment, fill the bottle with the strained water kefir and top it off with organic blueberry juice.

Seal the bottle and let it ferment at room temperature for another 24 to 48 hours, burping the bottle every 24 hours to release gas.

Refrigerate the bottle to stop fermentation and serve chilled.
