Water Kefir

Water kefir, known as Tibicos in Mexico, is a traditional fermented drink made from water, sugar, and kefir grains. It has been enjoyed for generations, often flavored with fruits and spices. This probiotic-rich beverage is celebrated for its refreshing taste and health benefits. Today, water kefir is gaining popularity worldwide as a delicious alternative to sugary sodas and is often made at home in various flavor combinations.

Weigh out the sugar into a separate bowl, using a ratio of 1 gram of sugar for every gram of kefir grains.

Pour filtered water into a suitable brewing jar.

Stir until all the sugar has dissolved in the water.

Place a jar cover on top of the jar and leave it at room temperature for two days.

After two days, pour the excess water into a separate jug and discard it, keeping the activated grains aside.

Place the activated grains into a clean brewing jar.

Repeat the process with the same amount of sugar: pour the sugar into the jar with the grains.

Pour fresh non-chlorinated water into the jar and stir well until the sugar fully dissolves.

Cover the jar with a lid and leave it at room temperature for another two days.

Strain the liquid through a sieve to separate the grains from the water kefir.

Bottle the strained water kefir for drinking.

Seal the bottles; kefir generally takes five to ten days to carbonate, depending on temperature.

If you prefer non-fizzy water kefir, you can drink it straight away.

To make flavored water kefir, add flavored syrup directly to the bottles and top up with water kefir.
