1

Start by straining the fermented water kefir from the grains using a fine mesh strainer over a bowl.

2

Pour off the liquid, which is the fermented water kefir, leaving the grains behind.

3

Bring filtered water to a light simmer or boil.

4

Add a quarter cup of brown sugar to the simmering water.

5

Allow the sugar water to cool before adding the water kefir grains to it.

6

Add the grains to the cooled sugar water and let it ferment for about 48 hours, checking for temperature adjustments based on your environment.

7

For the second fermentation, use a funnel to add a quarter cup of grape juice into a flip-top style bottle.

8

Fill the bottle the rest of the way with the already fermented water kefir, leaving about an inch of headspace at the top.

9

Cap the bottle and set it back to ferment for anywhere from 12 to 48 hours, depending on the temperature in your house.

10

Check on the bottles periodically to prevent any explosions due to over-fermentation.
