Warm milk in the microwave for 20 seconds and sprinkle yeast over it to check for a yeasty smell.

Separate eggs, using 2 egg yolks and 1 whole egg for the dough, and 2 egg whites for the filling.

Pour in the yeast and milk mixture and mix on low then medium for 5-6 minutes, adding a little flour if needed for elasticity.

Spray a bowl with non-stick spray, place the dough inside, cover with a tea towel, and let it rise until doubled in size, about 2 hours.

Beat egg whites until stiff peaks form and fold them into the poppy seed filling.

After the dough has risen, sprinkle flour on the surface, knead it a few times, and cut it in half to make two rolls.

Roll out the dough to fit the size of the loaf pan, about 3 mm thick, and spread the poppy seed filling, leaving edges open.

Roll the dough tightly, tucking in the edges, and place it seam side down in a sprayed and parchment-lined loaf pan.

Cover with a tea towel and let it rise until it fills the pan.

Prepare the second roll and freeze it if not baking immediately.

Brush the roll with a lightly beaten egg for a crispy skin.

Preheat the oven to 180°C and bake for around 50 minutes, covering with aluminum foil after 20 minutes to prevent burning.
