Add medium grain rice to a saucepan and cover with 2 cups of water.
Cook the rice until it's a little bit al dente, about 10 minutes.
Set the rice aside.
In a separate saucepan, combine 1 cup of coconut milk, 1 cup of coconut cream, and 1/2 cup of soft brown sugar.
Gently heat the mixture until the sugars dissolve.
Add the drained rice to the coconut mixture.
Add 1/4 teaspoon of salt and mix through.
Simmer for about 5 minutes on low heat, stirring to prevent burning.
Serve hot in a bowl, topped with coconut chips and a drizzle of coconut cream.
Squeeze lime over the top before serving.
