Traditionally made with milk, flour, and butter, the keto version substitutes almond flour and heavy cream to create a low-carb alternative. This sauce is versatile and can be used in various dishes, from lasagna to creamy soups, making it a popular choice among those following a ketogenic diet.

Coconut cream is dairy-free and maintains creaminess.

Nutritional yeast adds flavor without dairy.
Melt butter in a saucepan over low to medium heat.
Add xanthan gum to the melted butter and stir until it thickens.
Gradually add milk bit by bit, stirring continuously with a flat bottom wooden spoon.
Once the mixture comes together, continue adding milk until fully incorporated.
Season the sauce with dijon mustard, ground white pepper, and sea salt, stirring to combine.
Use a whisk to ensure the sauce is smooth after seasoning.
Add cheddar cheese to the sauce and stir until melted and smooth.
Prepare spinach by washing and cooking it down with seasoning, then drain and cool.
Prepare hake by skinning it and removing any pin bones.
In a gratin dish, layer the cooked spinach, place the hake on top, and cover with the cheese sauce.
Top the dish with extra cheddar cheese and cover with a lid to prevent skin formation.
Bake in the oven at 190°C (375°F) for about 25 minutes until bubbly.
Prepare a salad with tomatoes, onions, olive oil, and rocket to serve alongside the dish.
