3/4 cup raw almonds
1 stick (5 ounces) unsalted butter, softened
3/4 cup granulated sugar
1 tablespoon vanilla extract
1/2 teaspoon kosher salt (or 1/4 teaspoon fine salt)
Powdered sugar (for dusting, optional)

Preheat oven to 350 degrees F (175 degrees C).

Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the almonds.

Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.

Let the polvorones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
