Cook 1 chopped onion in a saucepan until translucent.
Add 3 cloves of minced garlic and cook for about 1 minute.
Pour in 28 ounces of no salt added crushed tomatoes.
Add 1 teaspoon of cocoa powder, oregano, basil, parsley, and black pepper.
Let it simmer for about 20 minutes, stirring occasionally.
Taste the sauce and adjust seasoning if needed, adding more garlic or basil as desired.
Add 1 tablespoon of tomato paste to thicken the sauce.
Simmer with the lid slightly ajar to allow flavors to develop and the sauce to thicken.
Once thickened, measure the sodium content per cup.
Let the sauce cool before transferring it to a gallon freezer bag, flatten it, and freeze.
