Mince shrimp and place in a bowl, add all ingredients including cooled onion, and mix until sticky.
Trim the edges of the bread slices.
Spread the shrimp mixture evenly on the bread (using a spoon or knife to press down slightly to prevent separation).
Cut the bread in half diagonally.
Fry in oil at about 170 degrees Celsius, with the shrimp side down, shaking the pan slightly to prevent sticking.
Fry until both sides are golden and crispy, then serve with cilantro and Thai sweet chili sauce.
