Mix all the ingredients, knead in the bowl for several minutes. Round the dough and rest for 30 minutes.
Stretch the dough and roll up. Repeat a few times.
Repeat the stretching and rolling. Let rise until the dough gets double in volume.
Divide into 4 equal pieces. Roll up each piece. Bench rest for 20 minutes.
Shape as shown in the video. Place on a floured cloth, proof until puffy.
Start preheating the oven to 425 F / 220 C with a baking sheet or baking steel inside.
Place the dough on a peel covered with parchment or baguette pan.
Score the dough, mist, bake for 10 minutes with steam, then stop steam and bake for 10-12 minutes or until golden.
Turn the oven off, crack the door, and let the crust dry for 10 minutes.
