Start by measuring 1 cup of warm water and adding 3 tablespoons of yeast to it.

Add 4 teaspoons of sugar to the yeast mixture and gently fold it in, then cover to trap heat and let it activate for 2-5 minutes.

In a large bowl, mix the yeast mixture with 2 teaspoons of salt and Kamut flour, starting with 2 cups of flour.

Gradually add more flour (up to 4 cups total) until the dough starts to come away from the sides of the bowl.

Transfer the dough to a floured surface and knead quickly, adding more flour as needed until the dough is soft and pliable.

Divide the dough into 4 equal pieces using a dough scraper.

Shape each piece into a long rope by pushing from the middle outwards until it reaches the desired length.

Grease the baking pans and place the shaped baguettes in them.

Cover the baguettes with a dish towel and let them rise for about 15 minutes.
