Place 1 cup of water, 2 1/2 cups of bread flour, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 1/2 teaspoons of bread machine yeast into the bread machine pan.

Select the dough cycle and press start.

Once the cycle is complete, grease a bowl with butter, shortening, or cooking spray and place the dough into the greased bowl.

Turn the dough to evenly grease all sides and loosely cover with a kitchen towel.

Let it rise in a warm place for about 30 minutes or until doubled in bulk.

Punch down the dough and sprinkle flour on a clean surface.

Turn the dough out and roll it into a 16x12 inch rectangle.

Cut the dough in half to create two 8x12 inch rectangles.

Beginning at the 12-inch side, roll up each half of the dough tightly, pounding out any air bubbles as you roll.

Roll the loaves gently back and forth to taper the ends.

Grease a cookie sheet and place the loaves 3 inches apart on the pan.

Make deep diagonal slashes across the loaves every 2 inches or make one lengthwise slash on each loaf.

Cover the baguettes and let them rise in a warm place for 30 to 40 minutes or until doubled in bulk.

Separate one egg and mix the yolk with 1 tablespoon of water, then brush the yolk mixture over the tops of the loaves.
