Mix strong white bread flour, instant dried yeast, and kosher salt in a large bowl.

Add cooled tap water and mix with the handle of a wooden spoon until combined.

Cover the bowl and let it rest for 45 minutes, repeating this process four times with folding in between.

After the last rest period, turn the dough out onto a floured surface and divide it into four equal pieces.

Pre-shape the baguettes and cover them with lightly oiled cling film to rest for 15 minutes.

Form the baguettes and transfer them to a well-floured baker's couche.

Cover the formed baguettes with a tea towel and let them rise for 20 minutes.

Preheat the oven to 200°C (400°F) and place a pan of boiling water in the bottom of the oven.

Transfer the baguettes to a lightly oiled baking tray using a piece of cardboard covered in tin foil.

Spray the baguettes with water and score them for even rising.
