Grease and flour a 2-pound (900 gram) loaf tin using butter, lard, or shortening.

Zest and juice one large lemon or two small lemons.

Preheat the oven to 170 degrees Celsius (340 Fahrenheit) or gas mark 4. Set to 150 degrees Celsius for fan-assisted ovens.

In a large bowl, add 4 eggs, sugar, 200 grams of vegetable or sunflower oil, and 1 teaspoon of vanilla extract. Whisk for about a minute until combined.

Add lemon zest and mix quickly.

Sift in self-raising flour, salt, and baking powder. If using plain flour, add an extra 2 teaspoons of baking powder (3 in total). Push any lumps through the sieve with fingers.
