1/2 cup water
1 small onion
large cloves of garlic
1 1/2 tablespoons whole-grain mustard
20 dried serrano peppers
2 roasted Carmen peppers
1 medium carrot
3 medjool dates
1 cup cilantro
1/2 teaspoon salt

Add 3/4 cup vinegar and 1/2 cup water to the Vitamix blender

Quarter the small onion and add it to the blender
