Bone-in pieces add flavor and are often cheaper.
Preheat the oven to 425°F and set the rack to the middle level.
Toss 2 lbs of little potatoes with olive oil and a decent amount of salt and pepper in a bowl.
Roast the potatoes in the oven for 30-35 minutes until golden on one side.
Trim excess fat from about 3 lbs of chicken thighs, ensuring they are well-trimmed.
Heat a large stainless steel pan over medium heat for a couple of minutes.
Add olive oil to the pan and distribute it evenly.
Brown 1.2 lbs of Italian sausage in the pan for a couple of minutes until it gets some color, but do not cook it all the way through.
Remove the sausage from the pan and slice it into pieces.
Season the chicken thighs with salt and pepper on both sides before adding them to the pan.
Brown the chicken thighs in the pan for about 5 minutes on the first side and a few minutes on the other side until golden.
Check the potatoes at 30 minutes and rotate the pan if necessary.
