Slice 2 medium onions and put them into a bowl aside.

Cut one red bell pepper, remove the ribs, and julienne it.

Slice garlic cloves and set them aside.

Clean 2 pounds of chicken thighs.

Season 1 cup of flour with salt and pepper, then dredge the chicken in it.

Preheat the pan to medium heat and add olive oil.

Sear hot italian sausage until golden, then remove and set aside.

Place chicken thighs skin-side down in the same pan and sear for a couple of minutes until golden.

Turn the chicken and sear for an additional 2-3 minutes, then set aside.

Slice the cooled sausages and set them aside.

Add onions to the same pan and sauté for about 10 minutes until soft and changing color.

Add garlic and sauté for an additional 2-3 minutes.

Add the bell peppers and sauté for a couple more minutes.

Deglaze the pan with 1 cup of dry white wine and reduce it by half.

Add the sliced sausages and 1/4 cup spicy cherry peppers with brine to the pan.

Add 2 tablespoons of vinegar and 1 cup of chicken stock.

Season with salt and pepper.

Add 3 sprigs of fresh rosemary and place the chicken back in the pan.

Cover with a lid and let it simmer on low heat for 30 minutes.

Remove the lid and let it simmer for an additional 20 minutes until the sauce thickens.
