Start by preheating the oven to 350°F.
In a bowl, add 1 and 1/2 cups of all-purpose flour.
Add 1 teaspoon of baking soda on top of the flour.
Add 1/4 teaspoon of salt to the flour mixture.
Add a pinch of cinnamon (about 1/8 teaspoon) and a pinch of nutmeg (about 1/8 teaspoon) to the dry ingredients.
Whisk the dry ingredients together until combined.
In a separate bowl, mash about 1 and 1/2 cups of ripe bananas (about 3-4 large bananas) using a pastry cutter or fork.
To the mashed bananas, add 6 tablespoons of melted butter.
Add 1 egg to the banana mixture.
Add 3/4 cup of plain white sugar and 1 teaspoon of vanilla extract to the wet ingredients.
Mix the wet ingredients together until well combined.
Gradually add the dry ingredients to the wet mixture and mix until just incorporated, being careful not to overmix.
Fold in 3/4 cup of walnuts into the batter until evenly distributed.
Prepare a cast iron loaf pan with a bread loaf liner.
Pour the batter into the prepared loaf pan, smoothing the top.
Bake in the preheated oven for about 55 to 60 minutes, checking doneness with a toothpick test.
Let the bread cool in the pan for about 15 minutes before attempting to remove it.
