  • 1/2 cup erythritol (or other sugar substitute)

Instructions

  1. 1In a large bowl, combine the sliced cucumbers and onions. Sprinkle with salt and let sit for 1 hour to draw out moisture.
  2. 2After 1 hour, rinse the cucumbers and onions under cold water and drain well.
  3. 3In a saucepan, combine apple cider vinegar, water, erythritol, mustard seeds, dill seeds, black peppercorns, turmeric, and red pepper flakes. Bring to a boil over medium heat, stirring until erythritol is dissolved.
  4. 4Once boiling, reduce heat and let the mixture simmer for 5 minutes.
  5. 5Pack the cucumber and onion mixture into sterilized jars, leaving about 1/2 inch of headspace.
  6. 6Pour the hot vinegar mixture over the cucumbers and onions, ensuring they are fully submerged.
  7. 7Seal the jars with lids and let them cool to room temperature.
  8. 8Refrigerate the jars for at least 24 hours before consuming to allow flavors to meld.
  9. 9Store in the refrigerator for up to 2 months.
