Traditionally enjoyed at breakfast, it embodies the art of lamination, where layers of dough and butter create its flaky texture. Today, croissants are enjoyed worldwide, with variations like chocolate or almond croissants becoming popular.
unsalted butter

Whole wheat flour adds fiber, while bread flour can improve texture.
Cut croissants in half and let them dry out for about a day or two.
In a stand mixer, combine almond flour, powdered sugar, and granulated sugar on low speed.
Add egg to the mixture and increase the speed until well combined.
Scrape down the sides of the mixer to ensure everything is mixed well, resulting in a sticky almond paste.
Dip each half of the dried croissant in the simple syrup, coating both sides.
Fill the croissant with almond paste using a small ice cream scooper, about two scoops per croissant, and spread it out with a knife.
Place the top half of the croissant back on and brush with simple syrup, then sprinkle sliced almonds on top.
Transfer the filled croissants onto a baking tray.
Preheat the oven to 350°F for about 15 minutes before baking.
Bake the croissants for approximately 25 to 30 minutes or until the almonds on top become golden brown.
Remove the croissants from the oven and sprinkle powdered sugar on top before serving.
