French Croissant
Cultural Context
Originating in Austria and perfected in France, the croissant is a symbol of French pastry culture. Traditionally enjoyed at breakfast, it embodies the art of lamination, where layers of dough and butter create its flaky texture. Today, croissants are enjoyed worldwide, with variations like chocolate or almond croissants becoming popular.
unsalted butter

Coconut oil is dairy-free and can provide a similar texture.

Whole wheat flour adds fiber, while bread flour can improve texture.
Mix all ingredients for the dough except for the butter and knead until a firm and strong dough is formed.
Add 100 grams of butter and continue kneading until a smooth and elastic dough is achieved.
Let the dough rest for 15 minutes.
Prepare the butter by shaping it into a 20x20 cm square on parchment paper with 250 grams of butter straight from the fridge.
Spread the butter inside the square as shown in the video.
Wrap the dough and butter in parchment paper and refrigerate for at least 12 hours.
Roll the dough into a rectangle twice the length of the butter (20x40 cm).
Remove the butter from the fridge a couple of minutes before use to soften it, then fold it into the dough as shown in the video.
The cold environment and cold butter are very important.
Roll the dough into a rectangle measuring 20x60 cm and fold it as shown in the video, then refrigerate for 30 minutes.
Open the dough into a rectangle measuring 20x60 cm and fold it into three layers to create a square of 20x20 cm.
Refrigerate for one hour.
Roll the dough into a rectangle measuring 30x50 cm, divide it into 5 rectangles, and cut each rectangle in half from the corner.
Shape the croissants as shown in the video.
Cover the shaped croissants with plastic wrap and let them rise until they are filled with air.
After rising, brush the surface of the croissants with egg and milk, then bake in a preheated oven at 180°C (356°F) from both top and bottom.
