Stuffed Potatoes with Ground Beef & Tomato Sauce

Prepare the tomato sauce by frying diced onions with minced garlic until fragrant.
Add diced tomatoes and season with ground coriander, ground cumin, sea salt, and black pepper.
Add a splash of water and blend the mixture with an immersion blender until smooth.
Wash the potatoes to remove any dirt.
Peel the potatoes and cut one end flat so they can stand up.
Cut the tops down to make all potatoes the same height.
Use a vegetable corer to hollow out the potatoes, creating cups.
Fry the hollowed potatoes in olive oil for a couple of minutes on each side until colored.
Season the fried potatoes with sea salt and black pepper.
Fry diced onions with minced garlic in olive oil until fragrant.
Add ground beef and break it up while cooking until browned.
Season the beef with ground coriander, ground nutmeg, sea salt, and black pepper.
Mix in a little of the homemade tomato sauce once the beef is browned.
Stuff the fried potato cups with the beef mixture, filling to the rim.
Set the stuffed potatoes in a large baking dish and fill gaps with potato ends and jalapeños stuffed with beef.
Pour homemade tomato sauce over the stuffed potatoes until nearly full.
Bake in the oven at 400°F for about 30 minutes or until fork tender.
