Often served during celebrations or family gatherings, it pairs well with hearty stews like beef, which add depth and flavor. Today, mukimo is enjoyed across Kenya and has inspired variations with different ingredients, reflecting the country's rich culinary diversity.

Spinach is widely available and nutritious, while kale is also affordable.
Peel the potatoes and remove any imperfections, then add them to a bowl of water.
Cut large potatoes into smaller pieces for even cooking.
In a pot, add vegetable oil and thinly sliced red onion, frying until translucent.
Add the potatoes and salt to taste, mixing in.
Cover the potatoes with water and cook until tender.
In another pot, add cleaned spinach, salt, and water, cover, and cook for 5-10 minutes until soft.
Remove the corn from the cob and wash it, then add it to a pot with a little water and cook for 3-5 minutes.
Drain the spinach and blend it until smooth using a hand blender.
Check the potatoes, drain any excess juice, and mash them until smooth.
Mix in the blended spinach and sweet corn.
For the beef stew, heat vegetable oil in a pot and add red onion, cooking until translucent.
Add chopped tomatoes and cook until soft.
Add beef and season with garlic powder, paprika, ginger, white pepper, and salt, mixing well.
Add a little water, cover, and cook until the beef is well done.
Garnish the stew with coriander leaves.
