Peel and chop 5 to 6 medium potatoes into smaller pieces.

Wash the potatoes several times until the water runs clear to remove excess starch.

Place a pot over high flame, add 4 cups of water and 1.5 teaspoons of salt, then add the potatoes and parboiled maize.

Boil the potatoes for around 3 to 6 minutes until cooked evenly.

Prep pumpkin leaves by removing the fiber and washing them until clean.

Add the pumpkin leaves to the pot with the potatoes and maize, cover, and cook together.

Slice and chop green onions, then sauté in 2 tablespoons of cooking oil with a seasoning cube and a little salt for 30 seconds to 1 minute until soft.

Drain the cooked potatoes, maize, and pumpkin leaves, letting excess moisture escape for 1 minute.

Mash the potatoes using a potato masher, then mix in the sautéed green onions and 2 tablespoons of pumpkin purée.

Let the mixture cool for 5 to 10 minutes before molding into balls.

Prepare an egg wash by whisking 2 eggs with black pepper and a little salt.

Scoop a handful of the mukimo mixture, place a piece of cheese in the middle, and mold it into a ball.

Coat the ball in the egg wash, then in bread crumbs, and repeat until all balls are formed.

Heat cooking oil in a frying pan, wait for it to get ready, then carefully drop in the mukimo balls.

Fry for around 30 seconds to 1 minute until golden brown.
