Spinach-Artichoke Dip

2 cloves minced garlic
1 tablespoon extra virgin olive oil
1 cup fresh coarsely chopped baby spinach
1/2 cup cream cheese, softened
1 cup shredded Gouda cheese
1/4 cup grated Parmesan cheese
1/2 cup mayonnaise
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 cup drained marinated artichokes, chopped

Cook minced garlic briefly in extra virgin olive oil to build flavor.

Add fresh coarsely chopped baby spinach a handful at a time, letting it wilt before adding more.
