Spinach-Artichoke Dip

1 pound frozen spinach, thawed
1 (14-ounce) can artichoke hearts, drained
8 ounces cream cheese, at room temperature
8 ounces sharp cheddar, grated, divided
3/4 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
4 teaspoons Dijon mustard

Preheat the broiler.

In a mixing bowl, combine the thawed spinach, drained artichoke hearts, cream cheese, half of the grated cheddar, kosher salt, black pepper, and Dijon mustard. Mix until well combined.

Transfer the mixture to a baking dish and spread it evenly.

Top with the remaining cheddar cheese.

Broil the dip until bubbly and blistered, about 5-7 minutes.
